Crostini with smoked salmon
To prepare this delicious meal you will need 6 slices smoked salmon, 4 slices Italian bread, 2 teaspoons capers in vinegar, 1 medium tomato, 1/4 cup mayonnaise, 1/2 teaspoon black pepper, 2 tablespoons olive oil and 1 teaspoon lime juice.
It is very easy and does not take more then 15 minutes. Just put in a blender salmon, mayonnaise, capers, olive oil and black pepper and blend on high speed until all the ingredients are well blend. When everything is chopped very fine add the lime juice and blend for another 10 seconds. Put the mixture in a deep plate and place in the refrigerator for 30 minutes to chill. At this time you can preheat the oven to 200Cand toast the Italian bread on both sides. Brush it with olive and heap the salmon mixture on. You can serve it with fresh, thin tomato slices on the top.
Christmas Pasta
This pasta is usually cooked on Christmas eve but if you like it, you can cook it any time through the year. All you need is 1 pound cappelini pasta, 1 can anchovies, 1 can olives, 1/2 cup roasted nuts, 2 cans Italian tomato puree, 2 tablespoon olive oil,2 large cloves chopped garlic, 1 cup raisins.
To cook the Christmas pasta, you have to heat the olive oil in a large pot first. Then add the oil from the can of anchovies. Cut the anchovies on small slices and add them to the pot too. Cook them for around 5 minutes, so they should start to melt. Now it is time to add the chopped garlic. Cook for another 5-7 minutes. In this time you can prepare the tomatoes. Pour them in a deep bowl and squish them with your hands. Add the tomatoes to the garlic mixture. Stir it occasionally and cook for 10 minutes. Add the raisins and the roasted nuts. Cook all together for 20 minutes. And if you want now you can add black pepper as much as you like. At the end add the olive slices and cook for no more then 4-5 minutes.
Separately boil the pasta according to the box directions. Usually it takes around 10 minutes after boiling. When the pasta is ready, dray it and in a wide pasta serving dish place 1/3 of sauce and pasta. Integrate the sauce with the pasta slowly with pasta server fork. Keep adding sauce until the pasta is well covered.
