Lamb, red wine and rosemary casserole with herby potato stacks and braised red cabbage is a perfect party meals cooked from shoulder of lamb, seasoned flour, red wine, beef stock, rosemary sprigs and red currant jelly, chopped thyme and red wine vinegar.

Method of Preparation

•    Preheat the oven and put the lamb to be fried until gets brown. IF needed you can make it in batches.
•     Brush a heavy baking sheet with a little olive oil and begin building 8 stacks of the potato slices.
•    Try to do them look random, and add as many of the herbs as possible.
•    Sprinkle the rest of the herbs and olive oil left in the bowl around and over the potato stacks.
•    It should be baked for 45 minutes, until becomes golden brown at the edges and tender.

To make the cabbage  you should do the following

•    Melt the butter and add the cabbage stirring to coat in the butter.
•    Add the redcurrant jelly stirring until melted.
•    Add the vinegar, orange zest and juice, the port.
•     Season.
•    Bring to the boil, cover and simmer for about 60 minutes or prepare in an oven.
•    Stir in the raisins and bring back to a simmer.
•     Cook for another half an hour.
